  2. assalamu alaikum, hermana Yvonne! I hope that this last Ramadan and Eid brought you and your family, along with all our muslim brothers and sisters who read this blog, many blessings, insha’Allah.

I am Mexican and I came to Islam nine years ago, alhamdulillah. I am on a mission to find the most awesome halal tamales. I’ve made some pretty good ones using fresh corn masa from a local tortilla factory here in Los Angeles. I mixed the masa with vegetable shortening, salt, baking powder, and chicken broth. The filling was black Oaxacan mole with halal chicken, and I wrapped them in banana leaves. But…
My husband and I find the vegetable shortening very heavy and hard to digest. We could feel the fat settling into our waistelines by the end of the meal.
I am very interested in your experiment using corn oil. Ideally, I would love to find a way to use fresh corn masa along with some viable fat that will give the masa the proper fluffy texture and flavor. As a Mexican, it is a heresy to substitute pork lard for some other fat to make tamales. I grew up eating them this way, as my mother is an excellent traditional Mexican cook. I certainly do not miss the pork, but I’m still looking for the right balance of ingredients, methods, flavors to make halal tamales that even my own mother would love, insha’Allah.
Please keep all of us posted on your results!

  3. Good day, I came across your site while looking for quick and easy halal meals. I will be hosting a saudi student in my home shortly and getting nervous about the dinner menu. Do you have a compiled pdf of your collection?
